Sweet Potato Chai Muffins

Chai is the Hindi word for tea. Chai tea, originating in India, is a black tea combined with a multitude of spices including cinnamon, ground cloves, and pepper. Typically consumed in it's loose-leaf form with whole milk and sugar, Chai tea is still commonly enjoyed in India. 

It is believed that Chai tea can aid in digestion through the stimulating effects of the black pepper and cloves, and the soothing vasodialation (relaxation of blood vessels) effect of cinnamon.

The ginger content of the tea combats inflammation in the body- which could lead to a weakened defense system, or further- disease. Inflammation is a necessary protective mechanism in our bodies, but chronic inflammation overworks the immune system preventing it from properly functioning. This can create opportunity for diseases such as cancer, heart disease, and depression. 

SWEET POTATO CHAI MUFFINS
Serves 12

INGREDIENTS

  • 1 cup buckwheat flour
  • 1 cup wholewheat flour
  • 1 tsp baking powder
  • 1/4 cup yogurt
  • 1 egg
  • 1 tsp cinnamon
  • tsp vanilla
  • 1 cup sweet potato, cooked and pureed
  • 1/4 tsp salt
  • 1/2 cup chopped pecans
  • 1 TBSP butter, or coconut oil
  • 1/4 cup honey
  • 1/4 cup almond milk

CHAI SYRUP

  • 1 cup water
  • 1/4 cup honey
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • chai tea bags

INSTRUCTIONS

  1. HAI SYRUP: Bring water and honey to boil in medium sauce pan. Reduce to simmer, add chai bags, cinnamon and vanilla. Simmer for 20 minutes, until reduced to a syrup. Remove tea bags at desired taste.
  2. Combine all ingredients except pecans in food processor, or mash together by hand until smooth. Fold in pecans. 
  3. Bake at 350C for 25 minutes.
  4. Let cool. These are great with butter, nut butter, honey - or can be made savoury with cheese!
