Vegan Summer Smoothies

Spring and summer time always has me craving cold, thirst quenching smoothies- these quick smoothies are also a great way to pack in nutrition to breakfast...or snack...or dinner...whatever, they work always, any place any time. Yumyumyum.

Of the nutrition powerhouses in these smoothies, one the stands out is the matcha green tea powder. It is finely ground green tea leaves loaded with anti-oxidants. 1 cup of matcha is thought to equal 10 cups of loose leaf green

VEGAN SUMMER SMOOTHIES

All three of these smoothie variations use the same starting base (ingredients in bold). It's fun to build on top of a standard ingredient base and create such different tasting smoothies.

CARROT CAKE
Ingredients:

  • 1/2 cup unsweetened almond or soy milk
  • 1/4 canned coconut milk, lite
  • 1/8 tsp salt
  • 1/2 ripe large banana
  • 1/2 tsp vanilla
  • 1 TBSP hemp seeds
  • 1/2 TBSP maple syrup
  • 3-4 ice cubes
  • 1 large carrot, preferably shredded
  • 1/4 tsp nutmeg
  • 1/4 -1/2 tsp cinnamon
  • 3 TBSP rolled oats
  • garnish with shredded coconut

STRAWBERRY CREAMSICLE

  • 1/2 cup unsweetened almond or soy milk
  • 1/4 canned coconut milk, lite
  • 1/8 tsp salt
  • 1/2 ripe large banana
  • 1/2 tsp vanilla
  • 1 TBSP hemp seeds
  • 1/2 TBSP maple syrup
  • 3-4 ice cubes
  • 6-7 large strawberries, about 1 cup
  • 1/2 tsp lemon juice
  • 1/8 tsp almond extract

MATCHA GREEN TEA

  • 1/2 cup unsweetened almond or soy milk
  • 1/4 canned coconut milk, lite
  • 1/8 tsp salt
  • 1/2 ripe large banana
  • 1/2 tsp vanilla
  • 1 TBSP hemp seeds
  • 1/2 TBSP maple syrup
  • 3-4 ice cubes
  • 1/2 cup spinach
  • 1 tsp matcha powder


Instructions:

  1. In a blender or vitamix, add all ingredients and blend until smooth. DONE!
  2. Possible garnish options for the smoothies include: shredded coconut, pumpkin seeds, hemp hearts, berries, dried fruit, cocao nibs...the list goes on!
